Give This Chicken Tortilla Casserole Recipe A Try

This Chicken Tortilla Casserole recipe is super simple, fun to make, and delicious to taste! It takes just thirty minutes to prepare and only takes an hour and fifteen minutes to cook. It serves twelve people, so it is perfect for a small gathering or it will make great leftovers for a small family. Give it a try and let us know how much you love it!
What You Need
- 1 boneless and skinless chicken breast
- 1 medium sized onion
- 1 minced garlic clove
- 1 cup of sour cream
- 1 can of green chiles, chopped and drained
- 1 teaspoon of cumin
- 1/2 teaspoon of salt
- Pepper- 1/4 teaspoon
- Corn Tortillas- 24- 6 inch
- Cheddar Cheese- 3 cups- shredded
What You Do
- Preheat your oven to 350 degrees. Spray a 13×9 inch baking dish with cooking spray.
- Place the chicken breasts inside a large stockpot. Cover the chicken breasts with water and add a pinch of salt.
- Bring the chicken to a boil and cook until it is tender. This should take about 30 minutes.
- Remove the chicken from the pot and let it cool down. Once it is cool, shred the chicken and set it aside.
- Save 3 and 1/3 cups of chicken broth. 1 cup will be used to make the chicken gravy.
- Place 2 and 1/3 cups of saved chicken broth, chicken gravy, onions, garlic, sour cream, green chiles, cumin, salt, and pepper in a large saucepan.
- Bring the mixture to a boil, making sure to stir constantly. Remove from heat.
- Spread 1 cup of the mixture into the bottom of the prepared baking dish from step 1.
- Place a layer of tortillas over the mixture. Spread 1/2 cup of shredded cheddar cheese on top of the tortillas.
- Repeat the layering process 3 more times. Your final layer should be shredded cheddar cheese.
- Spread the rest of the mixture over the final layer of cheese. Make sure all of the tortillas are completely covered or they will harden in the baking process.
- Bake in the oven for 30 minutes.

Chicken Gravy
You will melt 6 tablespoons of butter in a medium-sized saucepan for the chicken gravy. Whisk in 6 tablespoons of all-purpose flour until the mixture turns a light brown color. Whisk in 1 cup of chicken stock (saved from step 5) and 1 cup of milk. After the mixture thickens, add in salt and pepper to taste.
